Ingredients :
- 6 egg yolks
- 50g of sugar
- 1 vanilla pod from Vanille Harena
- 1 pinch of salt
- 35 cl of whole liquid cream
- 35 cl of semi-skimmed (or whole) milk
- Brown sugar for finishing (or white sugar)

Preparation :
1. Start by preheating your oven to 110°C for gentle, controlled cooking.
2. Split your Harena Vanilla pod in two and gently scrape out all those precious seeds.
3. In a saucepan, combine the milk and cream with a pinch of salt, the vanilla seeds, and the pod. Bring everything to a boil, then turn off the heat and let it steep for 10 minutes. This is where the Harena Vanilla releases its intense aromas.
4. In a bowl, whisk the egg yolks with the sugar until the mixture whitens.
5. Remove the pod from the pan and pour the warm milk and cream mixture over the egg yolks, whisking well to combine.

Cooking :
1. Pour your mixture into crème brûlée dishes and place them in a bain-marie or pour water into your ovenproof dish.
The bain-marie is the foolproof trick: it ensures even cooking and prevents the eggs from curdling too quickly, which could ruin the silky texture of the cream.

2. Bake for one hour. Your custards should still be slightly wobbly when you move them.

Training:
1. Let your creams cool then place them in the refrigerator overnight.
If you want to eat them quickly, you will need to leave them in the refrigerator for at least 2 hours.

2. When ready to serve, sprinkle the creams with brown sugar and caramelize them with a blowtorch to obtain that much-desired golden crust.

Remember, after using your vanilla pod for the cream, don't throw it away! It can still be used.
